Cubiq Foods developed a proprietary mechanical process to convert liquid oils, like sunflower oil or olive oil, into solid fats. Their product, Smart Fat, is a nutritious alternative to hydrogenated fats and it is composed of water and clean-label additives.
The initial focus for Smart Fat is baked goods, non-frozen meat and plant-based meat substitutes. Due to the water content, the product is not suitable for frozen products, however, future iterations will address that market as well.
Smart Fat reduces the amount of saturated fat as well as total fat in the finished product. It also reportedly has a higher retention rate when compared to other solid fats that tend to cook off when heated. This further increases product appeal as the prepared meal retains its flavor and juices.
Cubiq Foods looks to be the first manufacturer to offer commercial-scale production of nutritional cultivated fats. They are also developing Smart Omega-3, a dietary ingredient enriched in docosahexaenoic acid (DHA) and eicosapentaenoic acid (EPA).
